This cheese is a delicacy in Sardinia, where it is illegal. That's right. It is illegal in the only place where people actually want to eat it. If this does not communicate a very clear message, perhaps the larvae will, as they leap desperately toward your face in an effort to escape the putrescent horror of the only home they have ever known. Even the cheese itself is ashamed; when prodded, it weeps an odorous liquid called lagrima, Sardinian for "tears."

This is the nastiest cheese I've seen. Ever notice that most disgusting delicacies result from oppression or poverty? Some Mexicans consider corn smut a delicacy, but I suspect it landed on the menu only after an entire region's crop was infected. What we would call a crop failure, they had to eat or starve.
I heard that Korean '100 year old eggs' resulted from their having to bury their food in dung heaps to keep it from the Japanese or Chinese invaders. Sometimes they didn't find the eggs right away.
I can't stop thinking about that cheese. You say you have to go to Sardinia just for a taste? I imagine the maggots don't travel well.
