For that last example, is "excitable yokel" acceptable?

No I don't think it's right to say "excitable yokel."
Under the guidelines it has to be "A yokel who gets excited."

I suppose refering to most Islamist dominated countries as being inhabited by tail-less baboons would be totally out of the question.
